Delicious Veg Soup

Getting your weekly amount of vegetables in is tough. Part of not wanting to go that extra mile to eat them for most, is the time consumed, and that it just doesn’t sound very appealing.

The solution? This soup tastes so delicious, takes an hour and will have you set up for the whole week!

You’ll also get tips on what apps to use to help you at the supermarket when trying to figure out what is good, better and best for your health.

The ingredients are as follows:

1kg sweet potato

1/2 butternut pumpkin

2 leeks

10 baby carrots

1 onion

1 can of coconut cream

500ml vegetable stock

TBSPN of fresh ginger

Cinnamon cloves & nutmeg to taste

    Yummy! I just love soups – this is similar to one I make, I often add split peas or mung beans and a few teaspoons of a tumeric, cumin, coriander and paprika mix, stacks of garlic as well as lots of fresh green herbs from the garden minced and sprinkled over the dollop of coconut cream. A bit of red chilli and spring onions slithered lengthways and a little drizzle of olive oil turns simple soup into something special.

    Soups are also ready to digest so the body can readily absorbed all those nutrients.

    Next time I’ll have to sneak in some sweet potatoes. My 5 year old ‘hhhaaaaaates’ it but she’ll never know if its whizzed up in this 😉
